Chicken Soup for the Soul

On a lighter note, there has been a lack of Yummy posts as I’m seriously running out of ideas! After months of cooking unrepeated dishes, it’s time I repeat them. Heh! That’s what this food blogging thing is all about!

Here’s a new soup I tried and loved to bits! Everyday, I’ll wish Seth has leftovers so I can help to finish up. But alas, the little kid has my taste buds too! And dries the bowl every time!

Chicken Soup for My Soul

– 3 chicken drumsticks, de-skinned
– black fungus, sliced thinly
– celery, diced
– garlic cloves, cracked
– wolfberries
– dried scallops
– sesame oil
– water
– herb: coriander
– spice: pepper

1. Marinate chicken drumsticks with sesame oil, pepper and coriander. Set aside.
2. Fill pot with water. Add garlic, dried scallops and wolfberries. Bring to a boil and simmer covered for half hour.
3. Add celery and continue to simmer for another half hour.
4. Add drumsticks and fungus. Simmer for 30 to 45 mins.
5. Remove chicken. The flesh should fall off easily from the bones. Shred or dice the chicken and place in soup bowl. Pour hot soup over and serve.
