Backlog of Yummy Foods

Been doing alot of fun baking lately though the cooking is still ongoing. I’ve a long way to go before I become a baker. Heh! Meantime, I’d better just stick to my baby foods. At least I’ve got an excuse for producing bland, tasteless stuff! :p

This next dish is a winner with Seth too. He always finishes it and it’s a really great way to serve healthy celery!

Celery Chicken With Fresh Mushroom

– minced chicken thigh
– celery, diced
– fresh mushrooms, diced
– 2 eggs
– onion, sliced
– olive oil
– stock/water
– herb: oregano

1. Heat oil in a pan and stir onions till soft. Add celery and fry till color turns darker.
2. Add in chicken and mushroom and sprinkle some herbs. Stew for a few minutes till celery is soft, adding stock when dry.
3. Crack eggs into the pan and stir immediately. Stew further till eggs are cooked.
4. Serve warm.

This next one is a copy cat of shepherd’s pie. But being a boh chap cook like me, i dispensed with the piping of the potato ’stars’ and just laid everything flat on the fish. Anyway, it’s all gonna be mixed up when I divided them into ice cube trays!

Codfish Pie with Cheese

– codfish fillet
– potatoes, chunks
– carrots, chunks
– cheese, grated
– milk
– onion, sliced
– olive oil

1. Preheat oven to 180 deg.
2. Boil potatoes and carrots in milk till soft. Mash coarsely. Stir in grated cheese.
3. In a pan, stir fry onion in olive oil till soft and translucent. Add cod and pan fry for 2 mins on each side.
4. Shred cod into large flakes and lay in a greased baking tin.
5. Spread mashed ingredients over fish and bake for 15 mins.
6. Serve warm.

I swear this sounds better in Chinese. But translated, it just doesn’t give the dish it’s full credit.

Wakame with Flowery Egg Soup

– minced meat
– wakame (seaweed), washed and cut thinly
– 2 eggs, beaten
– fresh mushrooms, diced
– onion, sliced
– water
– olive oil
– herb : coriander
– spice: pepper

1. Marinate meat with herbs and spices. Set aside.
2. Place wakame and mushroom in slow cooker. Add water and set to cook for 2 hrs.
3. In a pan, saute onions in olive oil till soft. Add mince and stir till fragrant (partially cooked).
4. Pour into slow cooker and continue to cook.
5. Half hour before times up, stir in beaten eggs slowly.
6. Serve warm.

Ok. Here’s my baking craze at the moment. The Man loves it and asked to have them for tea in the office. Even my Mum asks for it! So it must be edible! ;p

Shortbread

– 250g butter
– 70g brown sugar
– 340g self raising flour
– 1 teaspoon vanilla essence

1. Beat butter and sugar in mixer till fluffy. Add vanilla essence.
2. Stir in flour by hand till stiff.
3. Roll dough to 1/4 inch thick. Cut to desired shapes with cookie cutter.
4. Arrange on baking tray lined with grease proof paper. Leave a gap in between cookies.
5. Bake for 20 mins in 175 deg oven.
6. Cool on rack before serving.

And healthier snacks for Seth. Actually I love this more than him for it has the custard taste I so love! Yum!

Bread and Butter Pudding

– 2 slices of bread (with skin)
– 1 egg, beaten
– 90 ml of milk
– 1/2 teaspoon of sugar
– butter
– *optional: cheese / raisins / banana

1. Butter both sides of bread. Tear into small pieces. Place in small baking tin.
2. Mix egg, milk and sugar together and pour over bread.
3. Press bread down so it is fully soaked in the mixture. *Mix in optional items evenly.
4. Bake in 180 deg oven for 30 min, or till golden brown.
5. Serve warm.
