Seth Loves his Greens!

Yeah! And I’m proud of it! My son is fond of his veggies! I find it fun to look for different vegetables to experiment on him. And so far he is rather receptive to all!

Sunday lunch! Stir fried Dou Miao, Sugar Beans, Baked Chicken patties with baby oats!

Baked Chicken Patties

– minced chicken
– 1 egg
– carrot, sliced thinly
– celery, sliced thinly
– broccoli, microwaved for 3 mins
– corn flour
– olive oil
– spice: pepper
– herbs: basil

1. Mix all ingredients well and roll into patties.
2. Place on greased aluminium foil.
3. Bake at 180 degrees for 30 min or until cooked.
4. To get a slightly browned finish, turn to roast for 10 min.

P/s: Watch out not to overcook or the chicken will get really tough!

Stir fried Veggies

Refer to stir fried veggies recipe for details. Just change the veggies and cut the beans with scissors!

Seth has been eyeing our food when we dine out lately. Thus resulting in alot of leftovers from his dinner. This time, I whipped up a simple fried egg with soba dish and it worked beautifully. Dinner time was delightly again!

Soba Omelette

– soba
– 1 egg
– olive oil
– garlic, chopped
– any veggie dish
– any meat dish
– cheese (optional)

1. Boil soba in water for 3 minutes. Drain and set aside.
2. Heat up oil in frying pan. Stir fry garlic till brown and fragrant.
3. Throw in precooked meat and veggie dishes.
4. Add cut noodles and stir fry for 5 min. Set aside.
5. Heat up oil in the pan again, pour beaten egg to cover the pan base.
6. Lay noodle mixture in a semi-circle on the egg. Spread cheese on the mixture and let it melt. Flip other half of egg over to cover.
7. Serve.
