Mushroom Madness

Cooked this impromptu cos I realised I forgot to use up my basket of mushrooms yesterday. Mushroom soup is my all time crave and the one served at Marche tops it all (Right! Apart from the one one I tried at 3 Monkeys years ago in Newcastle, Australia!) I love my mushroom soup blended and with tiny coarse pieces of mush! Yum! And Seth loved it too when I fed him some the last time we were at Marches. So here I am, home with a carton of mushrooms to finish up. What better way than to make some Cream of Mushroom?! The unseasoned, baby style of course!

Cream of Mushies

– white button mushrooms coarsely blended
– onion sliced
– garlic chopped
– herb: coriander
– milk
– vegetable stock
– butter/olive oil

1. Melt butter in a soup pot. Throw in onion and garlic and stir till soft.
2. Add blended mushroom and stir continuously.
3. Add milk and stock to desired texture and taste.
4. Serve with sprinkle of coriander.
