Fishball Kelp Soup

- fishballs, quartered
- kelp, sliced thinly
- ‘5-flower’ pork (Thinly sliced aka ShabuShabu type)
- white button mushroom, quartered
- wolfberries
- eggs, beaten
- water
- dash of sesame oil
- dash of pepper

1. Marinate pork with pepper and sesame oil. Set aside.
2. In a slow cooker set to 2 hrs, bring to boil kelp, wolfberries and mushroom in water.
3. Add in fishballs and meat when water is boiling.
4. Stir in eggs 30 min before times up.
5. Serve warm.

This was Seth’s dinner tonight. With the kelp soup, feeding was quite a breeze! :D


Stir Fried Chicken with Peas

- chicken thigh, diced
- garden peas
- white button mushroom, quartered
- 2 eggs
- onion, sliced
- garlic, chopped
- olive oil
- herb: oregano

1. Marinate chicken in oregano.
2. Heat oil in a pan, stir onion and garlic till lightly browned.
3. Add chicken and fry till half cooked. Add peas and mushrooms.
4. Stir fry till chicken is almost cooked. Water will come out from the mushrooms and chicken. If dish is too dry, add water as desired.
5. Beat eggs directly into pan and keep stirring till eggs are done.
6. Serve warm.
* Take note not to overcook the chicken or it will turn tough and yucky!

Mince and Greens

- french beans, diced
- minced lean pork
- carrot, sliced
- onion, sliced
- garlic, chopped
- olive oil
- water
- herb: mixed herbs

1. Marinate mince with mixed herbs.
2. In a pan, heat up oil and stir fry onion and garlic till browned.
3. Add french beans and carrots. Stir till well coated with oil.
4. Add in mince and mix well. Add water to desired consistency and simmer till veggies are fully cooked.
5. Serve warm.

ABC Soup

- corn, 2 maize cut into 3s each
- carrot, diced
- potato, diced
- wolfberries
- minced lean pork
- onion, quartered
- water
- herb: coriander
- spice: pepper

1. Marinate pork with coriander and pepper. Set aside.
2. In a pot of water, add all ingredients except pork and bring to a boil. Simmer for 30 mins.
3. Add minced pork and bring to a boil. Simmer for another 30 mins.
4. Remove maize from pot and slice corn from cob using a fruit knife. Pour corn back in the soup and mix evenly.
5. Serve warm.
* As this soup contains potato, which is a carbo food, rice intake can be reduced for that meal.
